Le pr\u00e9sent livre blanc vise \u00e0 donner \u00e0 l\u2019Am\u00e9rique du Nord plus de moyens pour r\u00e9duire les d\u00e9chets alimentaires dans le secteur industriel, commercial et institutionnel (ICI). Il propose des strat\u00e9gies exhaustives de r\u00e9duction \u00e0 la source de la PGA, ainsi que de r\u00e9cup\u00e9ration d\u2019aliments \u00e0 toutes les \u00e9tapes de la cha\u00eene d\u2019approvisionnement alimentaire \u2014production post-r\u00e9colte, transformation et distribution, service alimentaire et vente au d\u00e9tail. Apr\u00e8s une analyse de la situation actuelle, des causes et des impacts de la PGA en Am\u00e9rique du Nord, le rapport met en \u00e9vidence des possibilit\u00e9s de r\u00e9duire la PGA gr\u00e2ce \u00e0 la r\u00e9duction \u00e0 la source et \u00e0 la r\u00e9cup\u00e9ration d\u2019aliments exc\u00e9dentaires. Des estimations des quantit\u00e9s d\u2019aliments perdus et gaspill\u00e9s et des impacts environnementaux et socio\u00e9conomiques connexes sont \u00e9galement fournies.
