Dans le monde, environ 14 % des aliments sont perdus chaque ann\u00e9e apr\u00e8s la r\u00e9colte (FAO, 2019) et on estime que 17 % des aliments sont gaspill\u00e9s par les d\u00e9taillants et les consommateurs (<a href=\"http:\/\/www.cec.org\/files\/documents\/publications\/11774-characterization-and-management-food-waste-in-north-america-foundational-report-en.pdf\">PNUE, 2021<\/a>). La perte et le gaspillage d\u2019aliments repr\u00e9sentent de 8 \u00e0 10 % des \u00e9missions mondiales de gaz \u00e0 effet de serre et surviennent alors que plus de 800 millions de personnes souffrent de la faim dans le monde. En Am\u00e9rique du Nord, chaque ann\u00e9e on perd et gaspille environ 168 millions de tonnes d\u2019aliments : 13 millions au Canada, 28 millions au Mexique et 126 millions aux \u00c9tats-Unis. Par habitant, cela \u00e9quivaut \u00e0 396 kg au Canada, \u00e0 249 kg au Mexique et \u00e0 415 kg aux \u00c9tats-Unis (CCE, 2017).
